Today I present a classic dish of our Christmas holidays and not only … the vegetarian Russian salad, that is without tuna, which is one of the possible variants even if not used.
In fact, the vegetarian Russian salad, thanks to my mother-in-law, has become a dish that accompanies each of our party from Christmas, birthday dinners or any other event is present and today can not be missing on my table.
And it is already thanks to my mother-in-law I started to appreciate the vegetarian Russian salad, dish that I did not particularly like before, but then it became the dish par excellence and trouble if when we were at dinner or lunch she missed this dish like appetizer … because we all expected it !!!
Do it like her is impossible, because she was a teacher and there are no equal !!!
Today I write you the recipe for the vegetarian Russian salad just like her, but we will use our mythical pressure cooker that will halve the cooking time of the various vegetables making it a quick recipe, easy and very simple.
Ready pressure cooker in your hand and away …………
Ingredients for 6 people:
300 gr carrots;
250 gr very fine peas;
600 gr red potatoes;
6 tablespoons of mayonnaise;
extra virgin olive oil;
Salt to taste.
First clean and wash the carrots (try to use carrots that have the same size to make that all pressure cook in the same way) and put them whole in the pressure cooker add a teaspoon of salt up to ½ glass of water and stir, cover with lid and whist the flame down and cook for 3 minutes. Once the 3 minutes have passed, vent the pressure cooker and place them on a plate.
Simply rinse the pressure cooker with water and put the 250 gr. of peas, half a glass of water and a teaspoon of fine salt, mix and cover with the lid and whist for 5 minutes. Once the 5 minutes have passed, vent and put the peas in a bowl.
Rinse the pressure cooker again and after washing the potatoes well, here too try to choose potatoes with the same size (medium), put them whole and with the peel in the pressure cooker with half a glass of cold water and a teaspoon of salt. Cover the pot with the lid and whist the flame down and cook for 10 minutes. After 10 minutes turn off the heat and vent, place the potatoes on a bowl.
As soon as warm, start peeling.
Now we have to cut both carrots and potatoes into small cubes but to do this the vegetables must be cold.
I advise you to prepare them the night before or in the morning for the afternoon so as to keep them in the fridge and let them be cold, this to make sure that the vegetables do not then become a cream.
Now prepare the hard-boiled eggs, place the eggs in a saucepan pour cold water to cover them completely and put the saucepan on the stove, boil for 10 minutes. When cooked put the saucepan under the jet of cold water to let it cool and to let it snuff perfectly and without getting burnt.
Put the peas, carrots and potatoes cut into cubes in a bowl and season with olive oil and adjust salt. At this point add 6 tablespoons of mayonnaise and mix everything. Place the Russian salad on a serving dish or a large, low container or in single-serving bowls and place in the fridge.
And now we decorate !!!
Peel the eggs, remove and cut into slices and place them on the surface of the Russian salad. You can then add what you like most from salmon to shrimp or cucumber or peppers. And here’s your vegetarian Russian salad is ready, easy fast but effective.
