I had the opportunity to eat at the residence of the Ambassador of Finland on the occasion of the 70 years of Finnish schooling. What a pleasant discovery !! The Finnish school lunch is a real delight!
Finland was the first country in the world to establish by law that every pupil in primary and secondary school should receive, everyday, a free meal at school. The Finnish school lunch is prepared according to national nutritional indications, under the supervision of nutritionists.
Kitchens are located directly in schools, or provide for 3-4 smaller schools. Every two years there is a competition for the best school cuisine, and I have tasted some dishes prepared by the winners of this year. Dishes that are part of the Finnish school lunch.
Wurstel soup in meat broth, with carrots, potatoes and onion. I had never tasted the wurstel in this way … Incredibly good!
Chickpea puree with sun-dried tomatoes, quark cheese and herbs from Provence. A delicate and nutritious cream, which was served with baked potatoes and salad. This combination is a lunch, well-balanced and easy to make.
Paella with chicken, curry and turmeric. Finnish cuisine is opening up to international influences. Therefore, dishes of other nationalities are also offered at school.
And to close a great chocolate mousse.
