The chicken salad is a fresh, tasty dish, and made like my mother is even tastier and more tasty. TIt is perfectly suitable for spring / summer dinners and for those who always are on a rush because it can be prepared the day before because the ingredients blend better and it is even tastier.
This is a whole new family recipe …… Laura’s (also known as my mother) chicken salad, which is anything but light!!!!!!
There are three receipes that can gather the herd of relatives and friends in my house:
My mother’s chicken salad, Mom’s tiramisu and piadina, my mouth is just watering at the thought!
When Mom was cooking chicken salad, I would have said that summer had arrived because she was always preparing it at this time of year and she was doing it for a regiment and systematically it was never enough!
As for cooking times, us the pressure cooker to have the meat more tender.
Here we go …
Chicken salad, ingredients for 4 people:
3 chicken thighs and thighs
1 large or 2 small lettuce casps
3 red tomatoes
1 jar of stoned green olives
Extra virgin olive oil
3-4 tablespoons of mayonnaise
So first put the chicken in the pressure cooker with onions, carrots, celery, salt and two glasses of water. Make small holes in the chicken with a toothpick. Close the lid and whist for 25 minutes.
The procedures that require more time in this recipe are to cut all the vegetables, but we will optimize the time by cutting the vegetables while cooking the chicken in the pressure cooker.
In the meantime, take the lettuce, place it on a cutting board and cut it finely as in the picture, wash and dry it, using a salad spinner.
After washing the tomatoes, cut them as finely as possible.
Now it’s up to the olives … cut them into small washers.
Place the salad, tomatoes and olives in a large bowl and season with salt and turn very well, then add the oil. This is because the oil is not able to dissolve the salt and using this order the salt is better amalgamated with the salad and not with the oil.
At this point our thighs and chicken thighs will be cooked. Drain the pressure cooker and place them on the cutting board. Wait a few minutes for them to cool and then proceed to fillet the chicken.
After having filleted the chicken add it to the bowl, mix it all together and then add 5 tablespoons of mayonnaise and mix well. If you love mayonnaise you can put it at your convenience.
Prepare it first if you can because, more is flavored and more is good !!!!!
